THE CURRENT SIGNAL

FDA began a post-market reassessment of butylated hydroxytoluene, or BHT, earlier this year. BHT is an antioxidant used in some foods and food-contact applications to help slow rancidity.

On July 29, the agency reopened the comment period for 30 days. The deadline is August 31. FDA is asking for current-use information, safety data, scientific literature, exposure information, and other evidence.

That wording is worth remembering. “Under review” is not the same thing as “found unsafe.”

But it also does not mean the review is useless. A reassessment is a reason to notice an ingredient, learn where it shows up, and decide whether you want to compare alternatives.

U.S. PARALLEL — 1902: THE “POISON SQUAD” MADE THE INGREDIENT THE QUESTION

The early preservative fight started with one basic question: what is actually in the food?

In 1902, federal chemist Harvey Washington Wiley gathered a group of young government workers for what he called hygienic table studies. Newspapers gave the volunteers a much better name: the “Poison Squad.”

The men ate normal meals while measured amounts of common food preservatives were added under controlled conditions. Wiley studied substances such as borax, salicylic acid, sulfur dioxide, and formaldehyde.

Food manufacturing was changing fast. A shopper could buy something that looked bright, firm, or fresh without knowing which chemicals had been used to keep it that way. Federal labeling and safety rules were far weaker than they are now.

Wiley’s studies were crude by modern research standards, and we should not treat them as the way safety science ought to be done today. Their real power was public attention. Newspapers turned ingredient questions into dinner-table conversation.

That pressure helped build support for the Pure Food and Drugs Act of 1906. The law did not create today’s FDA overnight, but it pushed the country toward stronger labeling, testing, and federal oversight.

The lesson for tonight is smaller than the law. Wiley’s era taught consumers to stop treating the ingredient list as meaningless fine print.

You do not need to decide BHT’s safety from your kitchen counter. You need to know whether it is even part of your routine. Awareness comes first. Judgment comes after the evidence.

ANCIENT PARALLEL — ROME: A “PRESERVATIVE” COULD CHANGE THE FOOD ITSELF

People have always used ingredients and processes to keep food useful longer. Understanding every side effect came later.

Roman cooks used concentrated grape syrups called sapa and defrutum as sweeteners, flavorings, and preservation aids. Ancient agricultural writers including Cato, Columella, and Pliny described ways to boil grape must down until it became thick and sweet.

Some classical texts recommended lead or lead-lined vessels for parts of that process. Modern chemistry explains why that matters: acidic grape juice can react with lead and create lead compounds, including sweet-tasting lead acetate.

The history needs a guardrail. It would be wrong to jump from those recipes to the old pop-history line that “lead poisoning caused the fall of Rome.” Historians and bioarchaeologists treat Roman lead exposure as a much more complicated question.

The narrower lesson is enough. A food process can solve a real problem—sweetness, preservation, shelf life—long before people understand every consequence of the method.

Modern food regulation exists in a different world. We have analytical chemistry, toxicology, exposure models, public comments, and formal reassessment. That means an old ingredient can be looked at again when the science or usage changes.

A household does not need to recreate that science. It needs enough label awareness to respond when the science changes.

That is why a three-label check is useful even if BHT ultimately stays exactly where it is. You are building the habit of knowing what you buy—not reacting blindly after the next headline.
